Blackfish BYOB is featuring Dover Sole on its four-course tasting menu on October 14-16. Chef Chip Roman recommends pairing a Chablis, made with Chardonnary, which will the minerality, bright acidity, and subtle citrus notes that elevate the gentle sweetness of the Dover Sole.
