Blackfish BYOB is featuring King Salmon on its four-course tasting menu from November 11-13. Chef Chip Roman recommends pairing a silky, medium-bodied Pinot Noir, which strikes the perfect balance with its bright red fruit, earthy undertones, and hints of spice, against the salmon’s natural sweetness and the char from the grill or sear.
