Blackfish BYOB is featuring Pacific Halibut on its four-course tasting menu from September 30th to October 2nd. Chef Chip Roman recommends pairing a crisp, mineral-driven Chablis, due to the wine’s bright acidity and notes of green apple, citrus, and wet stone cut through the richness of the fish.
