Chef Michael Cappon – Isabella

How did you come to live and/or work in Conshohocken?

Well I have lived in Philadelphia for coming up on 5 years.  I was lucky enough to given the chance to do a tasting for Tom to compete for the opening Chef position at Isabella. Thankfully my food came out to be the best and I was offered the chance to open Isabella and make the menu my own.

Tell us about your restaurant or bar….

Isabella is a Mediterranean  style tapas restaurant with gourmet thin crust pizzas. We are a small plate focused restaurant but we also offer a full selection of main plates. We use only the freshest products and make everything that is possible in house at Isabella. We offer a small wine list and a selection of great beers that change regularly

What is your favorite dish or drink at your work?

It would have to be a tie between the spinach and ricotta gnocchi which we use house made ricotta cheese made from local milk and hand roll gnocchi and serve it with brown butter a touch of nutmeg and grated parmesan cheese. And the Mussels with are steamed and served in a sauce of roasted garlic, tomatoes and topped with a crispy potato and arugula salad

Besides something from your place, what is your favorite dish or drink in Conshohocken?

Lobster mac and cheese.

What are you involved in outside of work?

When I have the time l love to golf and travel with my wife
