Blackfish BYOB is featuring Diver Scallops on its four-course tasting menu from October 21 to 23. Chef Chip Roman recommends pairing Puligny-Montrachet with the scallops, as its gentle oak aging, creamy texture, and refined acidity bring out the scallops’ natural sweetness and caramelized edges.
