November is National Peanut Butter Lovers Month and lovers in and around Conshy are lucky to have Edwards Freeman Nut Company located right on Hector Street. Edwards Freeman Nut Company makes its own peanut and other nut butters every week. Not only do they have traditional salted, unsalted and chunky versions of peanut butter, but they also have chocolate, kick’in hot, butterscotch and cappuccino versions.
Edwards-Freeman Nut Company has been existence for over 100 years and based in Conshy since 1959 when the construction of I-95 forced their relocation.
Below is a recipe to help the peanut lovers celebrate:
Peanut Butter Pumpkin Mousse
Makes 8 6-oz. servings
2 cups canned pumpkin
2 cups creamy peanut butter
4 tablespoons powdered sugar
1 cup heavy whipping cream
Reddi-Whip topping
Coat a skillet or small saucepan with cooking spray and cook pumpkin for 3-4 minutes, stirring constantly. Let cool.
With a hand mixer, combine pumpkin and peanut butter. Add powdered sugar and beat on high. Add whipping cream and beat on high speed for 3-5 minutes until light and fluffy. Spoon into serving dishes, leaving room at the top for the garnish and chill for at least one hour.
Before serving, top with Reddi-Whip and garnish with candy corn before serving.
