Coyote Crossing Getting A $250,000 Facelift

A couple weeks ago we reported that Coyote Crossing was adding a Mezcal bar. We now have more information on what overall is a $250,000 renovation on the restaurant that opened in 1996. In addition to the new bar space, the renovations will include an updated main dining room, remodeled restrooms and a larger kitchen.

“After almost two decades at this location, we thought it was time for a new look. We decided the best way to achieve this was through added space. Now our long-time patrons will have more room and a fun, hip place to enjoy our delicious Mexican food and specialty drinks,” said owner Carlos Melendez. “The addition will include large glass doors, which will be wide open during the warmer months, so customers will still feel like they are outside.”

Coyote Crossing will also be introducing its own brand of Mezcal, which is similar and often confused with Tequila. According to the website MezcalPhD.com, all Tequilas are Mezcals, however, there are three distinct differences:

  • Tequila and Mezcal are produced in different states of Mexico (though there is overlap).
  • Tequila can only be made, by law, with one variety of agave:  the Blue Agave.  Mezcal can be made with upwards of 30 varieties of agave, though most are made with the Agave Espadin.
  • The production process for Mezcal is different from Tequila which leads to a distinctly different flavor profile for Mezcal.

The new Mezcal Bar at Coyote Crossing is scheduled to open on Thursday, November 6th. The restaurant is currently closed to complete the renovations.
